Apple & Cashew Salad Recipe

This is a recipe from a friend on our old block, Misty. We held a recipe exchange last fall with some ladies in our neighborhood, and she made this for us. It was amazing! Then I got to share this at our Soup & Salad night a few weeks ago at church. When I went to get my bowl from the table, there wasn't a *drop* of salad left... in other words, this is a really good salad ;)

Dressing:
1/2 cup sugar
1 tsp. dry mustard
1 tsp. salt
1 tbsp. grated onion
1/3 cup cider vinegar
3/4 cup vegetable oil
1 and 1/2 tbsp poppy seeds (optional)

Salad:
2 red apples, chopped and soaked in lemon juice (soak for a few minutes while doing everything else. I use about 4 apples for one bag of romaine lettuce - you can eyeball it).
Head of romaine lettuce
1/2 bag baby spinach
9 oz can cashews
grated swiss cheese (I use mozzerella, parmesan/romano, etc)

Combine all dressing ingredients, except oil. Then whisk in oil.

For the salad, mix lettuce & spinach together. Top with apples, cashews, and swiss cheese, then mix together with dressing.

*Chicken is an optional addition. I use boneless/skinless, fry in olive oil & chop it up.
